Another recipe we have are some yummy tortillas! This is definitely a go-to if I'm not sure what to make, but have a lot of cheese. You can add many things to a tortilla, salsa, chicken, lettuce, veggies etc. This recipe will help input more nutrition and foods into your child's diet, giving that yummy taste we all like.
What you need
1 whole grain tortilla
1/4 cup shredded cheese (mexican, cheddar, monterey jack are all great)
2 tablespoons no salt added canned black beans, drained, rinsed & mashed
2 minced tablespoons bell pepper that have been washed & seeded
How to make it
Dice the peppers really small
Smash the beans into a paste
Mix the peppers and bean paste in a bowl and set aside
Heat pan over medium heat and place one tortilla down.
Top the tortilla with about 2 tablespoons of shredded cheese and bean & pepper mixture, then
again shredded cheese, spreading evenly across the tortilla.
Fold tortilla in half and cook on each side for 1-2 minutes.
Make as many as you want and cut into little strips to easily be held
You can serve this with some yummy avocado and fruit, along with a drink!
